"Felino is an industrious agricultural and food production town on the right side of the Baganza stream. The town, dominated by the massive castle of the same name, once owned by the Rossi di San Secondo family and now splendidly restored and a refined restaurant, owes much of its fame to its production and marketing of ""Felino Salami"". The pieces of pork destined for this production are carefully chosen in a perfect ratio of lean meat (75%) and fat (25%), both white and pink, almost as if to compose a mosaic exalting the salami's intrinsic character. Spices are limited to a little salt and a few grains of black pepper with the addition of wine to enhance the taste of the meat, as well as typical curing ingredients. The salami is cased in pork intestines and aged for at least one month in appropriate rooms, where it takes on its typical form: a cylinder slightly swollen at its lower end, and its white-grey external colour. True connoisseurs leave it to dry for several more months, until it reaches a perfect consistency. For Felino Salami, produced exclusively in the province of Parma using fresh, non-frozen meat from heavy pigs, the European community mark of Protected Geographical Indication (PGI) has been requested. "
